Simple Baked Potato Soup *Recipe*

This is the simplest way to make potato soup out there.
Besides opening a can of it ;)

Grab some left over mashed potatoes.
Did you grow up in a house that always had mashed potatoes?? I didn't. We were more of the ..... Hurry Curry Chicken folks! :)  However, my kids are wildly picky and they love mashed so it's a staple around here.

Pour in some chicken stock (I used two cups.)


{Don't mind my saucepan ~ I have a hard water issue}

 I like to use this when I don't have chicken stock in the carton.


Epicure Selections

 Bring to a boil and then simmer until hot.
You can add more potatoes or stock according to the consistency you like.
Mine turned out like a medium thickness cream soup.

Ladle into bowls and top with your favourite baked potato toppings.
I chose sourcream, ground tri-colour pepper and old cheddar.
I definitely would've put some chives on if I'd had any.



So warm.
So fast.
So good.

I love to spend time in the kitchen but I don't always have that time so I love finding recipes like this one that taste great, and taste grown up, but I can still keep the lid on all of the goings-on in this house full of little people.

No makeup.
Hair up.
Roots growing in.
Stickers on my face that I am NOT allowed to take off.
Life in the mom-lane ;)
